Here’s why pizza al taglio is a fine choice even when you’re not in Rome. Literally Italian for "pizza by the slice", Pizza Al Taglio is a variety of pizza baked in large rectangular trays, and cut into squares to be sold individually.
What sets al taglio apart is the dough, which is made with more water than most. It’s also cold-fermented, resulting in some pretty fun science which we won't bore you with – but by the time our dough blob achieves the desired rise (which takes up to 72 hours) - a really long time in pizza years, it leaves us with the perfect base.
